1/2 C Fresh Mint Leaves- washed &dried- Tiny Homestead
1C Fresh Spinach Leaves- washed & dried-Pomery
1/2C Fresh Basil from Carriel Garden Sale
1/2 C Fresh Lemon Balm- from Black Rat Farms
1 tsp. Fresh Thyme Leaves- from Black Rat Farms
1/3 C Pistachios- shelled and salted
2 TBSP Fezziwig’s Premium White Balsamic Vinegar (plus more if needed)
1/4 C Fezziwig’s Lemon Olive Oil
1-2 Cloves Garlic- peeled and left whole
1-2 TBSP Lemon Zest- optional
Salt & Pepper to taste- Tiny Homestead
Place mint, spinach, pistachios, garlic, salt and balsamic in a mini prep and run until combine well. It will look like a paste. Slowly drizzle in the olive oil while running. You may need more oil and vinegar. Check for seasonings.
This pesto is delicious on grilled bread alone, grilled bread- (The Bread Guy) with goat cheese- (D&M Farms) and top with pesto, or on pasta!
